In 2013, the city of Zamboanga went on a war between military troops and rebel fighters. Over a thousand locals were hurt and displaced. Homes were destroyed by fire. Schools and businesses were shut down. But despite the chaotic situation, the people of Zamboanga were able to stand up and bounce back. They were able to maintain the colorful land, culture, tradition, and food. One of the unique delicacies in Zamboanga is the knickerbocker.
The knickerbocker is a localised version of the famous Filipino dessert – halo-halo. But the difference is, it is made of fresh fruits, and it is healthier. It mixes chunks of banana, mango, apple, watermelon, gelatin, milk with vanilla, chocolate, or strawberry ice cream on top.

Natebby's KnickerBocker started in late 2019. Originally Natebby's KnickerBocker began to as a simple gest of cooking for family and friends. Until 2021 when Natebby's KnickerBocker food trailer can offer a dessert that is a staple from where the owners originated began. The mission of Natebby's KnickerBocker was only to have a small business where the owners could share who they are and open employment opportunities. Today, Natebby's KnickerBocker have two (2) food trailer and one (1) pop-up booth.
Henerals can enjoy the heat of the sun because Natebby's KnickerBocker is there to serve its purpose of offering a cool, delicious, and healthy dessert in General Santos City.
